薑黃甘筍雞肉藜麥湯 (Turmeric Carrot and Chicken Quinoa Soup )

#薑黃 係對身體好好嘅一種香料,有抗炎 抗氧化作用,除咗用來煮咖哩,用來炒飯或煮湯都好吃呢!
#藜麥 係 Superfood ,除用來整沙律,煮湯都可以,仲可以增加飽肚感,但又冇米飯嘅碳水化合物,怕肥或減醣嘅朋友就好啱!

材料:  ( 份量:2  需時: 35分鐘) 
雞胸肉  1 (100克)
甘荀   1
西芹   2 (60)
洋蔥   半個
藜麥  40
    600毫升 
薑黃粉 2茶匙
    2茶匙
香葉  1
鹽、黑椒  適量

醃料:
鹽、白胡椒粉  1茶匙 


Ingredients:
Chicken Breast (about 100g) 1 piece 
Carrot 1 pc
Celery 2 sticks (about 60g)
Onion 1/2 pieces
Quinoa 40g
Water 600ml
Turmeric Powder 2tsp
Oil 2 tsp
Bay Leaf 1 piece
Salt and Black Pepper to Taste
Marinade:
Salt 1tsp
Ground White Pepper 1tsp

做法:
1. 雞胸肉洗淨切粒,下少許鹽和白胡椒粉醃 10分鐘 
Wash and cut the chicken breast into cubes. Marinate with salt and white pepper for 10 minutes.

2.藜麥洗淨,瀝乾水備用。
Wash quinoa and drain well, set aside.

3. 甘荀和洋蔥切粒。
Dice carrot and onion.

4. 西芹撕去纖維切粒。
Peel the strings off the celery, then dice.
5. 下油,燒熱湯鍋後,下洋蔥、甘荀、西芹和薑黃粉,炒3分鐘至洋蔥軟身。
Heat up a pot with oil, add onion, carrot, celery and turmeric powder, stir fry for 3 minutes until onion is soften. 

6. 加入水、香葉,大火煮至沸騰。轉小火煮 15 分鐘。
Add water and bay leaf, bring to a boil over high heat. Then reduce to low heat and boil for 15 minutes.

7. 加入藜麥、雞肉煮10分鐘或至藜麥熟透。
Add quinoa and chicken, simmer for 10 minutes or until quinoa is thoroughly cooked.

8. 加鹽和黑椒調味,即可享用。
Seasoning with salt and black pepper, then serve.

Tips:藜麥外圍出現一圈白色的小鬚就代表煮熟了
Quinoa is cool through when it has popped open, revealing the germ of the kernel.
